Hello dear friends,

I’m writing to share new discoveries and success. I’ve waited until something worthwhile and fresh appeared to share together. And  this is when I’ll write from now on. The steps for great health can all be found in past blogs and my Amazing Health Cookbook. So you’ll hear from me in the future when there is something that helps us progress and deepen.

There is a new Netflix video that is truly excellent, What The Health.”  Watch it as soon as you can. It inspired me to drop the little bit of cheese I’d have occasionally. And I quickly remembered how much I love and adore the foods that restored my health in the past and continue to each time I have a challenge. If you want a refresher on this way of eating, you’ll find it at the bottom of this page. It is truly delicious food, good for the planet and all of us.

The best news is, a friend recently called and asked for help with making changes in her diet and some cooking tips. She wanted to lose weight and improve her health. She is such an inspiration to me with her willingness to eat whole foods and stay completely on track. She finds recipes on the web and shares new dishes often. She has already lost 24 pounds and will continue to lose more. What she has to say about eating this way is:

” I am so grateful that the change in my eating habits came at a time in life when I really needed it and was ready to put forth the effort to change. It has totally improved my life in regards to becoming healthier. I had high blood pressure, some health challenges, and was overweight. Just eating whole foods has changed all of that for me.

What is unique about eating this way is that I’ve been able to find a healthy substitute for things I like most, such as unhealthy oils replaced with coconut oil, air popped popcorn in place of potato chips and fruit instead of sugary desserts. And that has made it so simple to stay with the whole foods program. I easily stopped eating the foods I wish I’d stopped eating years ago. I feel so blessed.”

Today’s recipe features tomatoes from the garden with an Indian flare. It’s delicious on its own or served over cooked brown rice. Enjoy!

 Lentils and Garden Tomatoes

1 1/2 cup French Green Lentils, washed
4 cups Vegetable Stock or Purified Water
1 large Onion, diced fine
1 small hot red pepper, remove seeds and dice
2-3 inch piece of fresh Ginger, peeled and grated
2 teaspoons mild Curry Powder
1 teaspoon Garam Marsalla
2 tablespoons Coconut Oil
1/2 lemon, juiced
2 cups of Cherry Tomatoes or Heirloom Tomatoes from the garden, chop in medium pieces
1 small bunch Cilantro (Use Parsley or 2 tablespoons fresh Thyme if you don’t enjoy Cilantro)
1 teaspoon Sea Salt

Sauté the onion, pepper, lemon juice, spices and ginger in the coconut oil until the onion is translucent. Add the lentils and stock or purified water and bring to a boil. Cover and cook on low heat for 30 minutes or until the lentils are soft. Add fresh tomatoes, cilantro and sea salt. Stir well and cook covered another 10 minutes.

Serve over cooked brown rice. Add a large helping of cooked dark leafy greens dressed with umeboshi vinegar and olive oil.

    Nice to have you in the valley here! Just wondering about your definitive word on coconut oil? Any defining moments for you around the good and any bad of it. We use it here a lot. However, my doctor says it should be used in moderation since the verdict is still out.

    • Great question, dear Felicia. I use it and enjoy it, but not only coconut oil. I like toasted sesame oil with some foods. And avocado oil is good for salads or cooking as it can sustain higher temperatures. Also, we make our own organic ghee, and I use this for beans and lentils alone or mixed with coconut oil
      I like the publicity about Medium Chain Triglyceride products. I’ve been told “Bullet” is a good Medium Chain Triglyceride product for brain clarity and energy. Haven’t tried it and will in the future. One question I have about it is it seems to need to be processed to achieve MCT’s. Time will tell.
