New And Exciting

There’s a lot of newness and excitement in our lives. As I shared previously, we are training to be Life Coaches in an understanding that explains how the mind really works. And our coaching allows people to go beyond issues that can create unnecessary suffering. We love this journey.

I’m coaching people who want better health and weight loss. What’s exciting is watching people discover and follow their own wisdom and live deeper and deeper well-being. I’ll share more to give you a taste of coaching in upcoming Posts.

Today, I offer you another, so yummy, dinner recipe that is quick to make and delicious. Try it and see. I served the polenta with a mix of dark leafy greens and beautiful garden vegetables. We eat at least 7 to 15 vegetables daily, 2 of them always dark leafy greens. Veggies are where so many nutrients are for regenerating the body, and we feel energized and nourished after eating them. So good.

Polenta, Green and Red Peppers and Cilantro

Chard and Veggies Steamed

Polenta Recipe

Cooked Polenta with Veggies and Chard

2 cups Polenta
1 small can Green Chilies
1 Red Pepper, diced
2 Jalapeño peppers, seeded and diced
1 1/2 cups Frozen Corn
1 bunch Cilantro, chopped
3 tablespoons Avocado Oil
Juice of 1 lime
6 Cups Water
1 teaspoon Sea Salt
1/2 teaspoon Ground Black Pepper
1/2 teaspoon Mrs. Dash Extra Spicy

In a large, deep pan bring water and sea salt to a boil. Gradually stir in polenta. Reduce heat and simmer gently, stirring often to prevent sticking and until mixture is very thick (approximately 20-30 minutes). Use a long handled spoon as mixture pops and bubbles and can burn. Stir in oil, green chilies, red pepper, corn, cilantro, lime juice, black pepper and Mrs. Dash Extra Spicy for the last 10 minutes of cooking. Add more sea salt if needed.
