Today, I offer you another, so yummy, dinner recipe that is quick to make and delicious. Try it and see. I served the polenta with a mix of dark leafy greens and beautiful garden vegetables. We eat at least 7 to 15 vegetables daily, 2 of them always dark leafy greens. Veggies are where so many nutrients are for regenerating the body, and we feel energized and nourished after eating them. So good.

2 cups Polenta
1 small can Green Chilies
1 Red Pepper, diced
2 Jalapeño peppers, seeded and diced
1 1/2 cups Frozen Corn
1 bunch Cilantro, chopped
3 tablespoons Avocado Oil
Juice of 1 lime
6 Cups Water
1 teaspoon Sea Salt
1/2 teaspoon Ground Black Pepper
1/2 teaspoon Mrs. Dash Extra Spicy
