The recipe today was inspired by our friend Wendi. It’s all about beans, brown rice and peppers. The peppers give the beans a sweet, deep flavor. Yummy, yes!

White Beans And Peppers Recipe

1 14 ounce can white beans, drained
1 cup cooked brown rice
2 jalapeño peppers, sliced in diagonals
1 red pepper, cut in triangles
1 yellow pepper, cut in triangles
1 green pepper, cut in triangles
1 bunch cilantro, leaves and upper stems chopped
1/2 teaspoon sea salt
Ground black pepper to taste
1 tablespoon avocado oil
Heat the oil in a large saucepan. Add all the other ingredients and stir.Cook until peppers are soft. Serve and enjoy.
Hi Connie and Bill. It was so lovely to see and hear you on your podcast. I appreciated the thoughts you shared and giving the reassurance about the corona virus. There is so much fear that is being ramped up. We have to be aware of the information, but the fear that is being created is negative and as you said, supresses our immune systems.
