Cooking Greens With Connie

We had a client ask us how to cook greens and make them taste great. So here’s our cooking video all about greens. Join us:

When you add onion and garlic to kale, collards, cabbage, bok choy, chard or beet greens it sweetens them and makes them taste so delicious. And then, to create a meal out of greens, simply add frozen corn, peas and pumpkin seeds. They are so tasty you don’t even need to add sea salt and pepper.

Dark leafy greens have the most nutrients per calorie of most any food on the planet. That’s why we encourage 2 servings a day as a good foundation of a healthy diet. They feed us in amazing ways that improves our health. They also take away cravings for foods we know aren’t great.

We have two large servings daily and sometimes three. We usually have cooked greens for lunch and a big salad of Romaine lettuce or leafy lettuces for dinner with an oil free dressing made from nuts and seeds. So good.

So, this week we have two recipes for greens–the first is with garlic and onion, and the second is with peas, corn and pumpkin seeds. Enjoy.

Greens with Garlic and Onion (Serves 2)

Beautiful Kale Ready to Cook

1 bunch kale or collard greens, torn in small pieces away from stems
2 cups cabbage, cut in small slices
1 small onion cut in half moons
2 garlic cloves, minced
1 teaspoon Avocado oil
3 tablespoons purified water (or more as needed to complete cooking)

Heat oil in a large pan. Add water, onion and garlic and greens. Cover and stir often and cook for 7 minutes or until greens are tender.

Greens with Peas, Corn and Pumpkin Seeds (Serves 2)

1 bunch kale or collard greens, torn in small pieces away from stems
1 cups cabbage, cut in small slices
1 teaspoon Avocado oil
3 tablespoons purified water (or more as needed to complete cooking)
1 cup frozen peas
1 cup frozen corn
1/2 cup pumpkin seeds

Heat oil in a large pan. Add water and greens. Cover and stir often and cook for 5 minutes. Add peas, corn and pumpkin seeds and cook until the dish is heated through (approximately another 2 to 5 minutes.) Serve and Enjoy.
