Lentils and beans provide as much protein as red meat, and without the saturate fat.

Also lentils and beans are anti-inflammatory. Isn’t it nice to know we can get our protein without adding inflammation, which is often the source of joint pain, fatigue and even anxiety and depression.

In addition, lentils and beans give us lots of fiber for our microbiome, the microorganisms that live in our gut. Our microbiome is an important element for a strong and healthy immune system, as well as producing vitamins and a playing a big role in absorbing the nutrients in our food.

These three benefits alone make it easy to see why we encourage lentils and beans as a key to great health.

Lentil Tacos

Lentil Tacos

1 can lentils, drained
1/2 cup salsa
1 Jalapeño, seeded and diced
½ teaspoon ground cumin
¼ teaspoon coriander powder
Large pinch of chili powder
Sea salt and ground black pepper to taste
1 cup cherry tomatoes, sliced 
Romaine lettuce, chopped
1/2 small red onion, small dice
4 corn tortillas
1 avocado sliced
Fresh cilantro, for garnish

Add drained lentils to salsa and Jalapeño. Add cumin, coriander, chili powder, sea salt and ground black pepper. Mix thoroughly.

Steam each tortilla and fill with lentil mix, cherry tomatoes, red onion, avocado and lettuce. Garnish with fresh cilantro and serve.
