Veggie-Nut Stir Fry with Rice
1 1/2 tablespoon sesame oil
1 onion, diced
3 cloves garlic, minced
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
3 carrots, cut in matchsticks
20 string beans, french cut
1 red pepper, cut in triangles
2 jalapeños, seeded and diced fine
2 cups cooked whole grain–brown rice, wild rice blend or quinoa
1 bunch kale torn in 2 inch pieces or cabbage, diced
3/4 cup nuts: almonds or cashews
In a large skillet add sesame oil, onion, garlic, sea salt and ground black pepper. Begin cooking on medium and then turn heat to low.
When onions are soft add, carrots, string beans, red pepper and jalapeño. Stir and cook 5 minutes.
Add cooked rice, kale, nuts and 2 tablespoons purified water if liquid is needed. Cook 5 to 7 minutes. Stir well and serve.
