We love our Vitamix blender. It does so many things for us. And it's just like magic.
And, you don't need a Vitamix blender to enjoy the wonders that a blender can do in the kitchen. Vitamix is one of the most powerful so it does the job beautifully, but there are other powerful blenders out there too. And less powerful ones, and less expensive, can work wonders in minutes as well.
The value of all the power is how smooth it can make things. Like nut milks, dressings and sauces. With our old blender, we could make all the same things, but they didn't come out as smooth... and we like smooth. 😎

We love the magic our Vitamix does for us, partly too because it saves us money. Buying commercial non-dairy milks or date paste is much more expensive than making it ourselves. And they're made fresh, providing a more nutritious product as well.
Our Vitamix is one of the most used appliances in our kitchen, along with the air fryer and Instant Pot. Don't know what we did without them. 🤔
The recipe this week is a Cabbage & Chickpea Coleslaw. It's a wonderful, fresh coleslaw for this season.

Carrot & Chickpea Coleslaw (Serves 2) *adapted from Emma Roche
- 3 carrots, grated
- 2 cups shredded red cabbage
- 28 ounce can Chickpeas, drained
- 3 tablespoons apple cider vinegar
- 1 lemon, juiced
- 1 clove garlic, pressed or minced
- 3 tablespoons fresh dill, chopped
- ¾ cup raisins
- Ground black pepper to taste
- 2 teaspoons no salt seasoning
Mix all ingredients in a large mixing bowl and toss well to combine. Enjoy immediately or let it stand for an hour before serving to allow the flavors to infuse the entire slaw.
