Cantaloupe Summer Salad *From Heather McDougall
- 1 cantaloupe, peeled and cut in 1-inch cubes
- ½ red onion, diced
- ½ cup cilantro, chopped
- 2 avocados, peeled and cut into 1-inch cubes
- 2 limes, juiced
- Pepper to taste
- Romaine or leafy green lettuce
Combine all ingredients and chill for 1 hour. Serve on a bed of Romaine or leafy green lettuces.
