This is a nice twist on our traditional cucumber soup. By creaming it (with cashews) it's richer and more filling. Still refreshingly wonderful too.
Creamy Cucumber Cashew Basil Soup (Serves 2 -3)
- 3 English cucumbers
- 3/4 cup raw cashews
- 4 tablespoons fresh basil
- 1-2 tablespoons Sumac (Optional to give salty taste)
- Fresh ground black pepper to taste
Chop cucumber into chunks. Add all ingredients to a high-speed blender and blend until smooth and creamy. Enjoy.
