Deliciously simple baked potatoes, these make a wonderful whole meal with a simple salad added or serve well as a side dish to black beans.
Mango Salsa Baked Potato (Serves 2)
- 3 medium potatoes or 3 medium sweet potatoes
- 1 fresh mango or 1½ cups frozen mango cut in medium pieces
- 1½ cups medium salsa
- 1 red pepper, diced
- 3 tablespoons finely diced red onion
- 1 avocado, cut in chunks
- (optional) lime slices
Bake potatoes at 425º F. for 1 hour
Mix mango, salsa, red pepper, red onion and avocado together.
Cut potatoes in half and cover with salsa topped with lime.
