Bill wanted to make a whole food plant based dessert celebrating Thanksgiving and the result is an amazing dessert made from whole food ingredients that would make a great meal: yams, sweet potato, almonds, dates and rolled oats. All that in a cookie! No wonder we feel so good when we eat them.

Pumpkin Spice Cookies
- 3 large or 4 small dates
- ½ cup almonds
- 1 cup cooked yams / sweet potato or unsweetened canned pumpkin
- ½ cup purified water
- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1 tablespoon molasses
- 1 dropper liquid stevia
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 2 teaspoons pumpkin pie spice
Preheat oven to 350º F.
Add dates and almonds to a food processer and process to a chunky texture.
Add the yams or canned pumpkin and the water and blend into the dates and almonds, scraping down the sides as needed to get it all mixed well.
In a large bowl, add the remaining ingredients: bananas, rolled oats, molasses, stevia, baking powder, cinnamon, pumpkin pie spice and mix well.
Add the ingredients from the food processer to the bowl and mix thoroughly.
Shape about 3 tablespoons of batter into a cookie form for each cookie on a parchment lined baking sheet and bake for 25 minutes, or until tops feel firm.
Remove cookies from oven and place on cooling rack.
Pumpkin Pie Spice
- 4 tablespoons cinnamon
- 2 teaspoons ginger
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- ½ teaspoon ground cloves
Mix well together and store in a small container.
