Spicy Mushrooms

These are a daily favorite for us. It gives us an important part of Dr. Fuhrman's GBOMBS and they add a wonderful flavour to so many dishes from salads to tacos.

Spicy Mushrooms *Adapted from Tami Kramer

  •  1 pound of your favorite mushrooms, sliced
  • 1/4 cup Balsamic Vinegar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon Chipotle Chili Powder or ½ teaspoon Mrs. Dash Extra Spicy
  • 1 teaspoon Dijon Mustard
  • Freshly ground black pepper to taste
Add all ingredients to a medium pan. Turn heat to medium-low, cover and check in 10 minutes. When the mushrooms become full of liquid, crack the lid open a bit and let cook until liquid evaporates (this takes 30 to 60 minutes depending on heat level). Let cool and store in refrigerator.

We love cooking up a batch of these and then using just 3 or 4 slices daily.
