Watermelon Salad (Serves 2-3)
- lettuce
- 6 cups watermelon, diced
- 1 large English cucumber, thinly sliced
- 2 cups strawberries
- ¼ cup pumpkin seeds
- ½ cup basil, torn or sliced
- 1 large or 2 small limes, juiced
- 1 tablespoon maple syrup
Optional:
- 1 Jalapeno, fine dice
- black pepper to taste
Slice the watermelon into 1-inch-thick rounds, remove the rind and cut into cubes.
Slice the English cucumber into thin rounds, about ⅛ inch thick.
Combine the watermelon, cucumber, strawberries and pumpkin seeds in a large salad bowl and stir.
Tear or slice the basil into small pieces and add to the salad bowl.
In a small bowl, juice the lime and mix with the maple syrup.
Pour on top of the salad bowl and mix well.
Serve immediately on a bed of lettuce topped with pepper (if using it), or store in the fridge until you're ready to enjoy.
